Nuno was born in Portugal and is from Leiria a city in the center of the country, his passion for cooking and hospitality was rubbed on him by his mother that from a young age worked in the industry. Nuno's passion for food and hospitality was such that he decided to pursue a career in the field and it all started we he joined Inftur Coimbra, where he took his culinary arts degree. Nuno was lucky enough to able to train in some of the best restaurants in the country, and this only cemented his passion for the industry. He took his first professional role in one of country's best 5 star resorts Vila Vita Parc, where he worked under Executive chef Kurt Gillig and had the opportunity to work in the Hotel's luxury fine dining restaurant Ocean. Nuno then relocated to London where he worked and ran some of the city's best restaurants for over 13 years. Such restaurants include, The Wolesley, Brasserie Roux, The Waterside Inn, Rhodes W1, Galvin At Windows, Galvin La Chapelle, The Corinthia Hotel, Aqua Shard and Quaglino's. Nuno is all about local seasonal ingredients, cooked with extreme attention to detail. He strives to produce beautiful and flavorful dishes ensuring sustainability and ethical sourcing are always at heart.
